Instead of getting cold bentos like we used to (when Tesco still sod them.. Grrr) we went all out and got hot food. She got some miso soup and I got some chicken ramen noodle soup. (This was when I still ate meat.) They were delicious! I definitely know what I'm going to get next time I'm in Dublin..
That noodle soup has been haunting me from the very moment I finished that dish, I knew I wasn't going to get anything near it in any restaurant so I decided to make my own!
Since I'm a pescaterian, I dislike eating chicken. I popped two quorn chicken pieces in the oven at 180° for fifteen minutes while I prepared the rest of my meal.
I couldn't find any ramen in Tesco so I got some udon noodes instead. The instructions with these ordered that the noodles were to be cooked in the microwave for 2 minutes with a little water, in a bowl and covered.

I chopped a handful of veg, I didn't use much veg as I was only cooking for myself. I put all of these in a saucepan of boiling water at different times so they'd cook perfectly. I put the broccoli in for around 10 minutes, the carrots in soon after for about 7 minutes, and the celery and mangetout in for the last 3 minutes.
I poured a bowl full of water into a saucepan and brought it to boil. When it had boiled I added a vegetable stock cube, two dashes of soy sauce and two dashes of worstershire sauce. I would have added more, like garlic, ginger and spices but I didn't have any in the house.
It tasted great without them anyway. :)
Lastly, I combined everything in a bowl!
First I separated the noodles with a fork so they were loose and easy to eat. I then added my vegetables, after that, quorn chicken, and finally, the vegetable broth.
Yum!! Who'd have thought I could make a delicious, filling, vegetarian meal that I'd actually really enjoy?! Not me! I am soooo happy with how this dish turned out, seeing as this was my first time preparing the meal.
I will definitely be eating this again, next time though, I might use less noodles, since they're so gigantic ad filling.
